Wellness Wednesday: Avocado Toast with a Twist

I'm a millennial, so it probably comes as no surprise that I'm obsessed with avocado toast. But it's not just because I'm a vegan foodie. It's because avocado toast is a delicious way to eat heart-healthy fats and get other nutrients such as vitamins K, C, B5, E, and B6. And according to the Cleveland Clinic, avocados are also loaded with potassium, copper, and fiber.

I love experimenting with different variations of avocado toast, especially when I'm in need of a quick yet filling lunch or breakfast. Plain old avocado toast doesn't always fill me up, but this one did — probably because of the added soy protein. I paired it with a handful of pita chips and a scoop of garlic hummus.

How to Make Avocado Toast with a Twist

  1. Toast the bread
  2. Spread a tablespoon of vegan cream cheese onto each toasted bread slice
  3. Top each slice of bread with avocado, a tablespoon of shelled hemp hearts, and the "Everything" seasoning

If you're looking to kick things up a notch, try adding some thinly sliced radish or tomato and a drizzle of olive oil. You could also mash the avocado with a little bit of garlic powder and lemon juice before topping your bread slices. With avocado toast, you really can't go wrong!
