Vegan Yogurt Parfait Recipe: My Go-To Breakfast

Probiotics are amazing for the gut, especially if you suffer from as many digestive issues as I do. According to a review published in International Scholarly Research Notices (ISRN), probiotics can help with everything from enhancing the immune response and improving intestinal health to preventing cancer and antibiotic-associated antibiotic-associated diarrhea.
Personally, my digestion has improved immensely since I started supplementing with several types of probiotics and consuming plant-based yogurt on a regular basis. I just wish I had discovered the benefits of probiotics earlier on in life, especially since I suffered from irritable bowel syndrome and other gut ailments for many years.
That said, there's one probiotic-rich breakfast I've been eating about three times a week — largely because it's healthy, easy to whip up, and delicious. Plus, it's gorgeous and looks much more labor-intensive than it actually is (so, bonus!).
Here's What You'll Need (Makes One Parfait)
- One cup plant-based yogurt (Forager Project Organic Dairy-Free Cashewmilk Yogurt is my absolute favorite)
- One cup of blueberries, sliced strawberries, or both
- 1/4 cup of granola (either oat-based or grain-free)
- One tablespoon of chia seeds
- Drizzle of agave nectar or pure maple syrup
How to Make This Vegan Yogurt Parfait
- Grab a small glass and drop in a few berries, followed by a layer of granola and a dollop of plant-based yogurt.
- Repeat with two additional layers of berries, granola, and yogurt.
- Top the parfait with a few berries, a tablespoon of chia seeds, and a drizzle of agave or maple syrup.
- Grab a spoon, marvel at the parfait's beauty, and enjoy!
Since this vegan yogurt parfait is so easy to whip up, I love making it when I'm short on time in the morning. If I'm really short on time, I'll skip the layers and simply add in a cup of yogurt, followed by the granola, berries, chia seeds, and sweetener. You can't go wrong either way. :-)
